the importancia of flour, due to its relationship with the wheat markets and as
a fundamental raw material for the preparation and consumption of bread.

Within this period, Buenos Aires was crossed by very important changes, such

as the intensification of the Bourbon reforms and the opening of the
Independence revolutions, going through demographic growth and the

demand for food, merchandise and services. We conclude by affirmating that
the main causes of the problems that affected the Common People were

related to the shortage of wheat, the difficulties in grinding, and the
impossibility of storing the products in Good conditions

Introducción

Como parte de un proyecto de investigación más amplio y complejo , el
presente artículo se propone clasificar y describir, en base a ejemplos

concretos, los principales problemas que afectaron tanto al vecindario como a
los productores y vendedores de harinas en la Ciudad de Buenos Aires,

teniendo en cuenta la importancia de dicho producto, por su relación directa

con los ciclos agrícolas y como materia prima fundamental para la

elaboración y el consumo de pan , acaso uno de los alimentos indispensables

en la dieta de los porteños de la época .
